Improved Chicken & Gravy Over Mashed Potatoes
When I was in elementary school, sometimes I bought lunch. I seem to recall it was 45 cents. What a deal! It was a fun treat to me, something different and therefore special. One of my favorite dishes they served is something I think would look gross to me today. It was Turkey and Gravy Over Mashed Potatoes. I remember it being an awful shade of brown. But unlike my own children, I don’t recall being turned off by colors of foods.
I have continued enjoying gravy over mashed potatoes throughout the years, but I’ve never tried to make anything like Turkey and Gravy Over Mashed Potatoes… until tonight.

Yes, it’s so good there’s more of the gravy than the potatoes! I started by caramelizing some onions (halved and sliced Vidalia). I removed the onions from the pan and set them aside, then put some cut up already cooked chicken in the same pan, and added some bacon drippings (maybe a little under a quarter cup) and about a cup of veggie broth (whatever was left in the box!) Then I sprinkled on top 2 big spoonfuls of potato flour and stirred briskly with a whisk. After the gravy was thickened and bubbly, I added some chopped spinach and the caramelized onions. I let it cook only a minute or two longer and then turned off the heat and just put the lid on to wait until Robert got home. But then the kids wanted to eat and I decided to go ahead and eat too. It’ll be another hour before Robert gets home (I misremembered the time he said.) It was delicious, and when I added salt it was perfect! Yum!
Looks oh-so-yummy to me too!! Yummm!! AND glutne free, which means I can try it too!
Yep, I’ve gotten quite in the habit of cooking gluten free, even though a lot of the time Caroline won’t even try new things I make. I figure it’s good anyway!
