Chocolate Peanut Butter Cookies

Tonight we’re going Christmas caroling with friends, and here is the cookie I decided to make for the occasion.  I got the recipe from my mom who copied it from AllRecipes.com in 2002.

Chocolate Peanut Butter Cookies

1 1/2 cups packed brown sugar

1 cup peanut butter

3/4 cup butter

1/3 cup water

1 egg

1 tsp vanilla

3 cups rolled oats

1 1/2 cups all purpose flour

1/2 tsp baking soda

1 1/2 cups chocolate chips

4 tsp shortening

1/3 cup chopped peanuts

Beat brown sugar, peanut butter, and butter until fluffy.

Blend in water, egg, and vanilla.

Add combined oats, flour, and baking soda; mix well.

Cover and chill 1 hour.

Shape into 1 inch balls. Place on ungreased cookie sheet.  Press into 1/4 inch thick circles.

Bake 8 to 10 minutes at 350 degrees until edges are golden brown.  Remove to wire rack to cool completely.

Melt chocolate over low heat.  Stir in shortening, mixing until smooth.

Top each cookie with 1/2 tsp melted chocolate and sprinkle with chopped peanuts.  Chill until set.  Store tightly covered.
